This is my fleet I built. It probably took over 2 months of building. It consists of 5 Venator Star Destroyers (40 operational TNT Cannons, 3 Long- Range Cannons) 3 Acclamator Cruisers (18 TNT Cannons, 4 Long-Range Cannons at the front) 20 Arquitens Light Cruisers (4 Cannons on each), 8 Consular Cruisers (No weapons) and 4 Medical Frigates (No weapons) There are also 35 LA-AT (Republic Gunships) surrounding the Venators. Each Venator has a Consular Cruiser docked inside. Combined, that is 8 Capital Ships, 28 Support Ships, and 35 Starfighters. That's 66 ships total, and 761 Operational TNT Cannons. Each Cannon fires a primed TNT every 5 seconds.

They're huge. Like, a mile or more long with crews of thousands. They've got tons of levels and tons of rooms, including armories, barracks, hangars (for both ships and land vehicles), massive engine rooms and other technical facilities, the command bridge at the top and probably a backup one somewhere too, plus everything they need to support their massive crews and complements of soldiers.I would avoid trying to map one out in its entirety. Have a few key rooms they might reach, and just gloss over the process of reaching those rooms unless of course a fight happens en route. In the recent novel 'Lost Stars' the Rebellion sends a boarding party to take a star destroyer at the battle of Jakku. Their plan called for taking the secondary bridge and taking control of the ship from there through the computer system.

They mention that if they had to take over the entire ship it would take weeks of fighting and many more troops than they had available. That makes me believe the decks would be numerous and the corridors like an endless maze. Like others have mentioned, just map out the active areas. The old West End Games d6 system had two great source books. The Death Star Technical Companion has a lot of interesting floorplans, and according to that, things like the Death Stars and Star Destroyers were basically built using the same modular rooms. They're not ready to use battlemaps or anything, but I remember there being a good deal of great layouts for things like crew living areas, detention center, etc. There's also The Imperial Source book from WEG. I don't remember if there are a lot of deck/floor plans in it, but there is a TON of information on the Imperial military is organized.Obviously, neither will have compatible stat blocks for the new system, but if you can find paper backs of either for.
